The Secret of Fresh Semolina Pasta – Have you ever tried adding a drop of extra virgin olive oil for a more elastic pasta? Discover the ancient trick that makes every shape unique and irresistible! Join us for a pasta making session! 🍝✨
🌾 **INGREDIENTS** (serves 4):
• 250 g re-milled durum wheat semolina
• 130 g water
• 10 g extra virgin olive oil
📝 **PROCEDURE**:
1️⃣ **Preparing the dough**:
• Pour the semolina into a bowl or onto a pastry board
• Gradually add the water and oil
• Knead the dough vigorously until smooth
• Don't add flour even if it seems soft at first!
2️⃣ **Rest**:
• Shape into a smooth, elastic ball
• Wrap in plastic wrap
• Let rest in the refrigerator for 10-15 minutes
3️⃣ **Final Preparation** ✨:
• Roll out the dough using a pasta machine or rolling pin
• Create your favorite shapes: orecchiette, cavatelli, scialatielli...
• Cook in boiling salted water for about 3-5 minutes
