HOME MADE BREAD WITH A TWIST 🍞
There’s nothing better than the smell of baking bread wafting around the house...
Recipe:
- 680g strong bread flour
- 2 tsp good rock salt
- 1 sachet (7g) dried yeast
- 50ml oil (olive, vegetable or walnut)
- 50ml honey or syrup
- 1tsp of cinnamon, ginger or all spice
- Mix & match chopped nuts, whole nuts, seeds, raisins, prunes, apricots or bran
Method:
1) In a large bowl mix yeast, salt, spices, nuts, currants and flour – for best results, use a mixture of white, whole meal, granary & spelt.
2) Fill a measuring jug with ¾ pint warm water and add the oil and honey/syrup - stir to dissolve.
3) Pour over the dry mix and begin hand-mixing to form dough.
4) Turn the dough out on to a floured surface and knead. Plant your feet solid to the floor and in a rolling motion bring the dough towards you with your right hand and push away with the heel. Repeat for 5 mins, switching from right hand to left.
5) Place the dough back in the bowl, cover with cloth and leave for at least 2 hrs.
6) Tip the risen dough out onto a floured surface and knead for 2 mins. Cut in half and place in floured bread tins.
7) Leave to prove again for 1hr, and bake at 180 degrees (pre-heated) for 25 – 30 mins.
8) Knock the bread out of the tins and return to the oven for a further 5 mins, or until the loaf sounds hollow to knock.
