Sheet pan veggies (yellow squash, zucchini, carrots, mushrooms, potatoes) and chicken breast (sliced before baking) tossed in olive oil, salt & pepper, garlic and smoked paprika. When done I drizzled across the pan a hot and spicy mayo and a hot sauce. They can make fajitas or just eat it. 😋🥰

Tonight was Wednesday night dinner at church. It was our turn and we did a simple Lettuce and Tomato salad w/Ranch, Tater Tot Beef Casserole, Italian green beans & Rolls for 220.

Dinner for last night was crispy baked chicken legs with a homemade “hot” bbq sauce, rice and beans. All from freezer, fridge and pantry. No recipes just improvised. 😋

I made a regular meatloaf with peppers and onions, eggs, bread crumbs and whatever seasoning you use. I made large meatballs and browned them off in skillet and then put on sheet pan and finished cooking in oven. While the meatballs were baking I sauteed more onions and peppers added garlic and tomato sauce and crushed tomatoes. Season how you like, simmer. Next very thin slice cabbage, saute with olive oil, salt and pepper until soft.

Plate: cabbage noodles on plate, meatballs on top then spoon on the sauce. Top with Parmesan. 😊

Yesterday was our turn to make the meal for the Wednesday night community dinner. Love doing this. We had 240 to cook for but ended up with 245. Menu was Baked Tortellini, Italian sausage and peppers and onions in red sauce, Caesar Salad, Italian Green Beans and Garlic Texas Toast. ❤️

Saturday I made a birthday cake for a friend’s twin grandchild. One wanted Red Velvet and the other wanted Strawberry. So I made a checkerboard cake and did hombre frosting on outside with vanilla cream cheese frosting and strawberry frosting. Top was divided by strawberries and chocolate pieces.

Delivered another charcuterie tray.

Then our dinner tonight for my father-in-law Parmesan Chicken, pasta and sautéed veggies.

On to next week. 🥰❤️

Last night we had another Wednesday Night dinner at church and it was my turn to cook the dinner. We planned for 230. Menu was Southwest Chucken, Rice, Doritos Taco Salad and Rolls. We ended up serving 240! So exciting to see it growing! 🥰

I haven’t posted much this last week because we had 8 jobs, 7 on Saturday and 1 on Sunday we were prepping for. I won’t have a lot of pictures because it was reception food you have all seen. I got a few pictures of new items but was so busy missed several dishes. Hubby was an awesome help!! 😂
1. Fresh Strawberry Cake

2. Ministry Breakfast 60 people breakfast casseroles, fruit tray and pastry tray

3. Going away party for 40-50, Charcuterie tray, French onion beef sliders, ham and cheese sliders, Caramelized onion dip with chips, Whipped goat cheese & honey with apples, Carrot Cake egg rolls & Chocolate cake balls

4. Funeral reception at church for 200, Chicken Salad mini croissants, Pimento tea sandwiches, Cucumber tea sandwiches and Turkey & cheese tea sandwiches, Fruit & cheese trays, bowls of chips, cookie trays and special Chocolate and Strawberry boards.

5. Baby Shower for 22, Chicken Salad Mini Croissants, Ham & cheese sliders, Beef & cheddar sliders, Lemon Basil Pasta, Olive Tray, whipped goat cheese w/apples, petit fours.

6. Birthday party for 40, Mustard potato salad and Chicken tenders.

7. Ministry reception at 7 at church for 25, Fruit & cheese tray, Assorted dessert tray

8. 4 yr old birthday party, 40 cake balls, Chocolate & Strawberry

Yes we were tired, but everyone was happy. Thank you to everyone. 🥰❤️

We made a cake for a qincenera to today. Just got it delivered and put together. Chocolate cake with Cream Cheese frosting, 4 tiers/12 layers with blue hydrangeas. Had extra flowers for the cake cutting table. 🥰

I cooked a pork butt in the oven last night to have today. Turned out pretty delicious. Made a coleslaw with cabbage, red onion, celery, craisins, mayo, apple cider vinegar, sugar, tobasco hot sauce, garlic, salt and pepper. Yummy 😋

Had some beef I picked up at the store “50%” off and obviously not going to be as tender as a ribeye to make a cheesesteak sandwich but turned out pretty good. I made mine too big and could only eat half of it. Saved the rest for tomorrow. Had to do steak fries to go with it. 😂
