As part of our new winter menu schedule, we’re keeping sliced brisket on the menu Thursday through Sunday, which means today is all about some of our other favorites!

🍂🔥 COBC WINTER MENU UPDATE — A FEW CHANGES HEADING INTO THE COLDER MONTHS!

Well, Central Oregon, winter is knocking on the door, and we’re making a few adjustments to how we do things here at Central Oregon Barbecue Company!

First off, WE’RE PLANNING TO KEEP SERVING BBQ SEVEN DAYS A WEEK! 🔥

But as we head into the slower winter months, we’re changing up when some of your favorites will be available.

Here’s the new game plan!

🍔🥪 MONDAY – WEDNESDAY: SPECIALS & BBQ FAVORITES!

These days will focus on our house-ground brisket smash burger specials, Brisket & Chicken Phillies, loaded Squatch Fries, BBQ nachos, sandwiches, bowls, and more!

We’ll still have plenty of delicious chopped brisket, pulled pork, and chicken, but NO SLICED BRISKET MONDAY THROUGH WEDNESDAY.

🥩🔥 THURSDAY – SUNDAY: SLICED BRISKET!

For those of you who love a beautiful slice of Texas-style smoked brisket, these are your days!

🍖 FRIDAY – SUNDAY: ST. LOUIS RIBS!

And yes, you read that right…

WE’RE ADDING SUNDAY RIBS THROUGHOUT FOOTBALL SEASON! 🏈🔥

Because honestly, what goes better with Sunday football than a rack of real wood-smoked ribs?

🌶️🥓 SATURDAY: TEXAS TWINKIES!

Our bacon-wrapped, brisket-stuffed jalapeño goodness will now be a Saturday specialty!

We may also bring them out on select football Sundays, so keep an eye on our updates!

No Friday Twinkies for now.

We’re still figuring out the best way to balance production, staffing, and keeping that smoker running efficiently through the winter.

The goal is simple: KEEP THE QUALITY HIGH, KEEP THE BBQ COMING, AND GIVE YOU MORE REASONS TO VISIT THROUGHOUT THE WEEK!
