Great Performances was incorporated in 1979 as a waitress staffing service for women in the arts, offering an alternative way to supplement meager artist incomes with work in the fledgling catering industry. The industry boomed overnight and Great Performances grew along with it, most notably by adding men to its personnel roster and catering to its client services. Ten years later, the company mo
ved to Hudson Square where it now occupies 23,000 square feet, a space more than 15 times the size of its original commissary.
