Hi Community we Chef’s Juli and Juan here, for those who don’t know us, and we cook together every single week at Persimmon in Fort Collins. 🧡

she brings Colombia to the plate. I bring Baja, and together a whole lot of fusion… so, somewhere in the middle we found a menu that feels like nothing else in Northern Colorado.

American.mediterranean. latin. middle eastern. all of it made from scratch. all of it made with love.

we’ve been doing this for over a decade — but this chapter at Persimmon feels like the one we were building toward all along.

Bees. Pets. Fire on the stove. Hands in dough. Quiet mornings and loud kitchens.

Juli and I didn’t set out to build something — we just kept saying yes to the things that made us feel alive. Food. Nature. Each other. Community.

Somewhere in all of that, a life happened.

We’re going to start sharing more of it. The cooking, the chaos, the honey, the fur babies, all of it.

Because we believe the world gets better when people live it fully — and share it honestly.

Nobody told Fort Collins about yaki onigiri yet.

We’re fixing that. 🍙

Crispy-edged sticky rice triangles stuffed with a mix of cream cheese, charred serranos and mushroom duxelle — finished with a ponzu kick. Served with hoisin-honey sauce, soy glaze, nori and toasted sesame.

It’s crunchy. It’s creamy. It’s a little burned taste. It has absolutely no right to be this good. 😝

FoCo MX requires serious fuel. Enter: The ultimate Steak Sandwich. 🎸🔥
We aren’t messing around with your lunch plans today. We’re taking tender, ancho-chipotle rubbed brisket, braising it in a rich vegetable broth, and piling it high with sweet caramelized onions, melted provolone, and our signature remoulade sauce. Oh, and it’s served with a side of au jus for that mandatory dip, plus gherkins for the perfect crisp crunch.
