I learned to make pastries like this long before I understood what I was eating.

I first learned this style of pastry working in a bakery, at a time when I wasn’t thinking about vegetarian ingredients, food dyes, or whether something was truly made from whole foods

Now that these have become so sensational, I wanted to return to that technique and remake them from my current frame of mind — focused on vegetarian, whole food baking and a more thoughtful approach to ingredients

Everything is made from scratch, with careful attention to what goes into each layer

I even make my own white chocolate, because most versions available contain fillers or additives I prefer not to use

This is that same pastry, made in a way that reflects how I understand food now.

We’ve been refining our base with raw ahimsa milk over the past few weeks, bringing it to a place where it’s deeply creamy, smooth, and melts beautifully on the tongue.

Lavender is fully infused into the cream, giving it a lush, rounded floral richness, with poppy seeds adding a delicate texture throughout.

Made without additives or stabilizers, using natural ingredients — including raw honey — to create a soft, balanced texture.
Naturally tinted a soft purple with ube.

Prepared simply, intentionally, and offered with care.
