JUICY CHICKEN & GLOW-UP VEGGIES
aka the “I’ve Got My Life Together” Plate
When your dinner looks like it pays taxes on time, does yoga at sunrise, and reads self-help books for fun.
Here’s how to make this wholesome dish.
INGREDIENTS
(for two servings )
The Main Character:
2 chicken breasts (the Beyoncé of proteins is what i like to call it)
2 tbsp olive oil
1 tsp garlic powder (because flavour is not optional)
1 tsp smoked paprika
Salt & pepper
Juice of ½ lemon (optional but makes it extra juicy.
The Supporting Cast:
1 red bell pepper
1 yellow bell pepper (sunshine)
1 zucchini (hydrated queen)
1 red onion
A handful of cherry tomatoes.
2 tbsp olive oil
1 tsp dried herbs (your Italian alter ego)
Salt & pepper (again, because we don’t do bland here!!
THE METHOD TO THIS DELICIOUS MADNESS
1. Set the stage: Preheat your oven to 200°C.Line a baking tray because we don’t like mess.
2. Marinate the main character: Rub chicken breasts with olive oil, garlic powder, paprika, salt, pepper, and lemon juice. Let them marinate for 15–30 mins.
3. Veggie glow-up: Toss all the veggies with olive oil, dried herbs, and salt + pepper. Think of it as a group spa day.
4. Assemble the masterpiece: Spread your veggies on the tray, place the chicken on top like the queen it is, and slide it into the oven for 25–30 mins until golden, juicy, and ready for its close-up.
5. Final glam: Let the chicken rest (she’s been working hard), then slice and serve side by side with a sprinkle of fresh herbs.
