Made some hake, haddock and potato cakes with fresh coriander, chilli and lemon zest

Recipe:
5 hake medallions
5 smoked haddock medallions
Poach in milk and water with butter, salt, pepper and 3 sprigs fresh lemon thyme.
Drain and flake.
Add 3 cups mashed potato (4 large potatoes) with salt, pepper and butter.
Combine all together. Add 1 cup maizena, 3 eggs and half cup flour.
Add:
4 spring onions, finely chopped
2-4 red chillies, finely chopped
Handful chopped coriander
Handful chopped flat leaf Parsley
Zest of 1 large lemon - reserve the juice for after fish cakes are cooked

Divide mixture into heaped tablespoons, flatten into circles. Deep fry in batches.
Drain on paper towel. Squeeze lemon juice over before serving with fresh chopped spring onion, chilli and coriander
