Juicy beef rump skewers, kissed by the flame, served with cucumber & red onion pickle, burnt lime, and a duo of sauces to drag, dip or drizzle.

This ‘Smoked Kudu, Truffle Aioli & Parmesan Wafer’ has quickly become one of our go-to favourites.
We love how the gentle smokiness of the kudu carpaccio plays off the richness of our house-made truffle oil aioli. Add a crisp parmesan wafer and a burst of freshness from young onion and rocket sprouts, and you've got a bite that’s as balanced as it is bold.

We recently served this at a corporate wine pairing dinner, where it was matched with a dry red wine - a beautiful Bordeaux-style blend of five varietals, layered with deep, dark fruit and earthy complexity. The pairing brought out both the umami depth of the kudu and the herbaceous lift of the sprouts - a moment of harmony on the palate.
