I have been involved in the pub and restaurant industry from my early twenties. I took on a challenge around this time to renovate and manage my own pub, running this operation smoothly and successfully. I managed various pubs and restaurants before completing my Chef Diploma at The Prue Leith School of Food and Wine. This opened up the doors for me to explore the Hotel industry. Having a strong f

oundation working in 5 star Hotels, both in al a carte and buffet service, gave me an advanced knowledge of the smooth running of kitchens. During this time I had opportunities to interact with important public figures including Jimmy Carter, Will Smith, Bill Clinton, Quinton Tarantino, Kofi Annan, Tim Robbins and my highlight, Nelson Mandela. We work very closely with Conscious Cuisine where ever possible, we use local fruit and vegetables
We recycle organic and reuse synthetic materials as much as possible.
