One of the greatest misconceptions in hospitality is that quality is created in the moment.

The truth is that exceptional events are rarely the result of last-minute heroics. They're the result of planning, preparation and a team working together behind the scenes long before the first guest arrives.

Every successful function starts with confirmed numbers, finalised menus, ingredient sourcing, staff scheduling, logistics planning and countless small details that most guests never see.

While we're always willing to help where we can, we've learned an important lesson over the years:

The better the planning, the better the experience.

Try 1000’ds. Plan too early - food spoils. Plan too late - chaos on a plate.
From menu drafts and last-minute changes, to ordering, prepping, cooking, cooling, storing (at exactly the right temps), packing, transporting, setting up, reheating, serving, desserting, yes desserting is a thing and finally packing it all down again.
All to make it look effortless, powered by caffeine and a light seasoning of pain tablets.
We don’t just feed people, we feed masses of people, and always with a smile somehow.

So next time you see a chef, a simple “thank you” goes a long way. Preferably with coffee. We do love Coffee
