Wow what a day and still so far to go ### and still a few to go but called it today at Chappies base - will take up the challenge from there ### thank you so far it’s been a jol and huge thanks to for being the most stellar patient guide he who can do this in under a day 😍

Traditional bolognese takes a day of cooking and then a day of testing before it tastes rich and delicious - this vegan lentil version takes an hour at the most and is delicious from the get go - if you are looking to make more plant-based meals for whatever reason this is an excellent ‘meat’ replacement dish - can be paired with pasta or vegetable spirals or even add some frozen veg and top with mashed potato for a meat free cottage pie.

The hosted by KZN Trail Running in association with WildSeriesTrail is one of the highlights of my trail calendar and although every year I declare, ‘I must do some new races!’ I always end up adding the series into my already often packed calendar.

Last year, I was terribly rude about the food - so rude in fact I was invited to put my money where my mouth was
And my declarations that ‘I could do the food and run the race,’ was accepted.

Here we are with Friday evening’s harvest table spread - Trail Kitchen, Andrew Booth’s support team, produced braai goodies and Carla and I made the following:

egg fried rice and plain rice
A mixed Asian mushroom stew with vegetarian meatballs, goji berries and water chestnuts for crunch

Patty pans and courgette
Mixed beans and broccoli
Pumpkin and chick pea curry from lunch now with chicken to add to the
Carnivore’s delight
A mung bean noodles with preserved black beans for salty flavour
Sweetcorn and peas
Tomato salad, pasta salad, Sliced almonds and seeds
And we finished things off with sago in coconut cream

An omnivore’s feast but with a lot of
Vegan options for those attempting to change up their diets.

Producing the food and running is hard work, I won’t lie. Carla Lea Farina and I got up an hour earlier giving ourselves a head start each morning to be back in time for lunch prep and service - although being navigationally challenged meant this was pretty tricky for us to find our way - missing essential markers in the dark, tackling all the spiders and man eating flies, climbing over gates and fences (these were actually on the route but we were ahead of the trail marker each morning 😅) was worth it for the sunrise each day, the pure pleasure of being out on the trails, the silence of the forest (aside from the killer hounds barking) the reflected eyes of leopard (ok fine it was a bushbuck) and all the other creatures real or imaginary was magic and for that I would happily offer my cooking services again while aided by my trusty shoes and lubed up by ### .

If you are a plant based athlete you have to pay particular attention to your nutritional needs - selenium is essential to good health and is found naturally in nuts.

Here is a delicious black rice with pistachios, almonds and pomegranate jewels. The rice has been spiced with a sushi vinaigrette and finished off with finely sliced spring onions.
