HERTZOGGIES

Makes about 18

INGREDIENTS
500 ml cake flour
10 ml baking powder
pinch of salt
25 ml sugar (for pastry)
125 g margarine
3 large eggs separated
40 ml cold water
200 ml white sugar (for topping)
400 ml dessicated coconut
apricot jam

INSTRUCTIONS
Pre-heat the oven to 180° C.
Lightly coat 18 patty-pan cavities with cooking spray.
Sift flour, baking powder and salt into a bowl. Rub in the margarine thoroughly.
Add in the sugar, followed by the egg yolks and water, working lightly to bind together to form a ball of firm but pliable pastry.
Roll out the pastry fairly thinly on a floured worktop, and cut out 7cm diameter rounds.
Gently press them into the prepared patty-pans, and spoon a small teaspoon of jam into the base of each.
Beat the egg whites until stiff.
Fold the sugar and coconut into the egg white.
Spoon generous spoons of this topping over the jam, to cover completely.
Bake for 20 minutes.

KERRIE NOODLE SLAAI – hou vir lank in die yskas:

Dit is een van daardie slaaie wat altyd met ons sal wees. Of jy dit op kleinskaal maak vir n paar gaste of op grootskaals vir n onthaal – dit bly n wenner. Maak dit op n Vrydag en dit hou vir die hele naweek as iemand dit nie in die nag gaan opeet nie.

BENODIG:
•500 g gaar noodles
•1 groen/rooi/geel peper fyn gesny ( kies jou kleur)
•1 ui fyn gesny
•250 ml tamatiesous
•125 ml witasyn
•125 ml kookolie
•200 ml suiker
•30 ml kerriepoeier ( of meer)
•Tabasco na smaak
•sout en peper

NOU:
Kook die noodles tot sag maar nie pap nie, dreineer goed.
Sny jou ui en peper in mooi klein blokkies en meng dit deur die noodles
Meng die res van die bestandele in n bakkie.
Roer dit deur jou noodles.
Los dit oornag in die yskas. Hoe langer dit staan hoe lekkerder word dit.
Dit is n heerlike bygereg by braaie of sommer net vir so eet.
