Creamy Sweetrice/Rice pudding

250ml White Rice
1lt Full Cream Milk
250ml Fresh Cream
125ml Condensed Milk
60g Butter
6 Cardamom, toasted and finely ground
250ml Sugar
Nuts(optional)
Rasins (optional)

Wash the rice well and drain. Add rice and Milk, to a heavy based pot. Cook on medium to low heat.Stiring occasionally so that the rice dont stick. Once the rice is soft and creamy, add the butter, and elachi. Stir in the condensed milk and continue cooking for 10 minutes.Pour in the fresh cream and mix well . Simmer for another 5 minutes. Add the sugar and leave to thicken . Garnish with nuts

Fishcakes made with Middlecut

1 Can Middlecut (Cleaned and washed)
1 Small Onion Chopped
Chillies Chopped
A handful of Chopped Dhania (Coriander)
1 Slice of bread ( Soaked in milk,then squeeze the all of the liquid from the bread)
1 egg
Salt

Mash all of the above ingredients together. Shape into equal patties. Chill in the freezer for 30 minutes. Then fry on medium heat, until golden brown. Drain on kitchen paper.
Enjoy!
