So we did a little practice on the Lang 60” today! Butterflies a 9 # butt, brisket flat, one unwrapped BBack ribs and 2- St Louis ribs. All complete in 6 hrs... Really enjoyed the stick burner.

We had a very nice cook today at the Beltway showdown. 4th in ribs and 7th in brisket for 7th overall! Sure was nice catching up with some fine folks on the “other” coast.haha. Plank Salmon and pork chops on the tonight! Dijon mustard, Cajun and brown sugar on the fish, finished at 145*. Pork chops rubbed with , finished at 162*. Happy Monday!
