I'm cooking up a storm, and I'm excited to share my gluten-free chicken parmesan with you.
Honestly, I think I’m just preparing in case the power goes out. 🫣

I started by slicing the chicken breast thin and mixing gluten-free AP flour and panko with some seasonings.

Then, I whisked a few eggs and got to work breading the chicken.

After heating some olive oil in a stainless steel pan, I seared the chicken and let the excess oil drip off.

Next, I placed the chicken on a parchment-lined sheet pan, added marinara sauce, and a blend of Parmesan and mozzarella cheese.

All that's left is baking it in the oven at 350 degrees until the chicken reaches 165 internally. Now, the only question is whether to have it with pasta, salad, or both.

What’s your go-to snow prep meal?
I usually stock up on chili, but today I switched it up and went with braised pork — perfect for a cold day.
I measure with my heart, so there’s no official recipe but here’s what went into the pot:
• Pork butt
• Lime juice
• Orange juice
• Fresh ginger
• Garlic cloves
• Jalapeño
• Red onion
• Brown sugar
• Cumin
• Chili powder
• S&P
• Water
• splash of ACV
Sear the meat, all the rest of the ingredients and cook low and slow until it’s falling apart.

Jack of a few trades, Master at one!
A little over two years ago, I made a big decision. I sat with it for a while—honestly wasn’t sure I could pull it off. That’s probably why I didn’t tell many people at the time… but I’m proud (and a little relieved) to finally say:
I’ve officially earned my Master’s in the Art of Teaching, with a concentration in Culinary Arts.

It’s been a long, challenging, and rewarding road. I couldn’t have done it without the incredible support from my family, friends, former teachers, and coworkers.

So, what’s next? I’m thrilled to say I’m stepping into a new role as a Culinary Instructor at... (announcement coming soon!)

And for everyone wondering about Gourmet Bae—yes, she’s still alive and well. One of the reasons I relocated was to make room for this new chapter. While I’ve been a bit quieter on social media, it’s all been part of the plan.

Moving forward, Gourmet Bae will be focusing more on summer events—weddings, private dinners, graduations, holidays, all that good stuff. So while things might *look* different, nothing’s really changing. Just evolving. Thank you for being part of the journey!
