Catered a Gala for 350 guests. Passed Appetizers, 4 Action Stations. 1 Mediterranean Grazing Table. So Much Food!!

The Menu:
Hamachi w/ Leche de Tigre, Banana “Cream” Tartletts w/ Brûlée’d Banana, Million Layered Potatoes w/ Steak w/ Herb Aioli, Za’atar & Sumac Crusted Halibut w/ Date Syrup Stewed Lentils & Shwarma Spiced Charred Cauliflower. Moroccan Braised Beef Short Ribs w/ Dried Dates, Apricots, Cinnamon Sticks, Star Anise w/ Whipped Sweet Potatoes. Asian Chicken Tacos w/ Pineapple Salsa. Asian Steak Tacos w/ Pear & Cucumber Salsa.

Just picture it: Live jazz. Old Fashions flowing. The Menu: Lobster & Black Eyed Pea salad, fried green tomatoes w/ herb aioli, fresh shucked oysters w/ spicy pot liquor reduction, whiskey braised oxtails w/ whipped sweet potatoes, mac n cheese, Collard greens w/ smoked ham hocks, hot water cornbread. Peach Cobbler & 7-Up Cake.

*Yield: 2 Loaves
250g Starter
780g Water
1020g Flour
20g Salt
1/4 C. Sugar
3 T. Vanilla Bean Paste
1 Stick Frozen Shredded Salted Butter
1 Pint Fresh Blueberries
3 T Sugar (to coat berries)
Cinnamon to Taste
