Your Knife Story Vol 3. From Alfred in USA
1) When and how did you first discover Japanese knives?
A couple of years ago, several of my sushi master friends showed me their Japanese knives, indicating how important the sharpness & hardness of Japanese knives in cutting sashimi and fishes.
2) Why do you use Japanese knives (How you enjoy your Japanese knives)?
Because of the balance of sharpness & hardness, I really love to use all the different types of Japanese knives, especially the yanagiba, gyuto, and deba.
3) Would you like to continue using Japanese knives in the future? If so, what types of blades and Japanese knives would you like, or find interesting?
I would definitely continue to use Japanese knives and continue to explore the different types of blade materials. VG-10 is now one of my favorite steel. My next goal is looking for a yanagiba made with VG-10 and Western handle.
