Your Knife Story Vol 3. From Alfred in USA

1) When and how did you first discover Japanese knives?

A couple of years ago, several of my sushi master friends showed me their Japanese knives, indicating how important the sharpness & hardness of Japanese knives in cutting sashimi and fishes.

2) Why do you use Japanese knives (How you enjoy your Japanese knives)?

Because of the balance of sharpness & hardness, I really love to use all the different types of Japanese knives, especially the yanagiba, gyuto, and deba.

3) Would you like to continue using Japanese knives in the future? If so, what types of blades and Japanese knives would you like, or find interesting?

I would definitely continue to use Japanese knives and continue to explore the different types of blade materials. VG-10 is now one of my favorite steel. My next goal is looking for a yanagiba made with VG-10 and Western handle.

4) How is our JCK store? If you have any advice, suggestions or requests for our store and business (To improve our product selection or service), we will happily and gratefully listen.

As for our catering, we will continue as Gourmet Grub Catering.

All donations will be taken to SERVE 6.8 Storehouse — the partner agency for American Red Cross of Colorado.

Our wonderful partners at WHALE Respite Center anticipate opening on June 17th! As the first non-profit center in Weld County to offer childcare for children with delays and disabilities, they're pioneering crucial services in our community. WHALE will provide a daycare program for children from birth to 4 years old who have delays or disabilities, as well as Summer Camp care for those aged 5 to 20 years old facing similar challenges.
