Smashed potatoes-microwave 4 med potatoes, peeled, smashed lightly, add butter, sour cream, salt & pepper to taste. Mix it up!

I’ve been breaking in my new Pampered Chef (PC) cast iron skillet. The only changes I made from Ree Drummond’s recipe: Regular thickness pork chops, instead of cumin I used PC Southwest seasoning, no cayenne, definitely lemon pepper & seasoned salt. Cook the pork chops til no longer pink.
Instead of a Roux, once I removed the pork chops from the skillet, I added a can of cream of chicken soup to the PC skillet w/ 1/2 the can of milk and 1/2 the can of water, when this was blended I added in the cooked onions & bellpepper.
Served the sauce over the pork chops and smashed potatoes. Yummy! I already ate it I’m so stuffed!
