Smoked beef rib w/ BBQ sauce. Super savory and rich, yet simple in its process.

24 hour high salinity brine with bay leaf, thyme, fennel seed, coriander seed and black peppercorn.

24 hour BBQ rub overnight.

8 hour smoke at 225F until the bone pulls.

Salt. Smoke. Cure. Brine.

These age old techniques are not only pillars of the processes behind The Swimming Pig, but preservation methods used by hunter gatherers for millennial to get through harsh winters and maximize the consumption of a kill fully. This craft was developed out of a primal necessity, not gluttony- it takes time, practice and patience.

We brine our briskets for 5 days and smoke them for 16 hours- not a process you can do in the fly or on a whim. Our ordering, curing and smoke schedule is plotted at least a week in advance to juggle multiple curing and brine times as well as varying smoke times and temperatures depending on what we’re processing.

In short, respect the process 😎🔥🐖

Rib season is upon us! We always use St. Louis pork ribs, a rib cut from bottom of the ribcage on the belly side.

They’re fattier, meatier and more uniform than baby back ribs, and when rubbed with our signature spice rub and slow smoked for six hours- they’re the perfect New England summer snack!

Try them this Saturday smothered in our Texas BBBQ sauce- we have plenty of wet naps and paper towels 😎🐖🔥

Our retail sausages are now available at several grocers and restaurants around the island and we couldn’t be prouder!

This winter project took an enormous amount of resourcefulness, perseverance and dedication to accomplish, and we’re so happy to be able to share it with our community, finally!

More sausage flavors to come down the line, plus a couple different flavors of bacon and several varietals of salami!

Next stop; Cape, Nantucket and mainland coastal New England muahahaha 😎🐖🚀
