“I have a picture of me when I was 14 years old, wearing my FFA jacket, bending over a grill… cooking. I have always enjoyed catering different AG functions. I have been catering for 25 years. This BBQ wagon here was designed by a friend of mine. We met at a coffee shop once and I told him what I wanted to do and he drew it up on a napkin. He’s a fabricator and designer and I just knew what I wanted. He made it, just the way I thought it should be. I have used this same one for 25 years cooking hot, over oak wood. This is my full-time job, my own business. At the peak of the business we did 800 events per year, now days we are down to about 400 to 500. I start doing bull sales in February and then start the wedding season and company functions then on to company holiday parties. The 400 to 500 events are squished into 10 months. I always tell people, this is my chef hat and if that bothers you then we’re probably not in the same boat. Most time it’s OK.
It’s been rewarding, maybe not financially but, I enjoy meeting people and being a part of their function. Over the years I have seen guys go out of business but I have always kept my prices affordable, that‘s what saved me a few years back. There will always be a need because people like to eat.”
