BUTTERCREAM CAKE 101!
I see so many pics of cakes that have what's called cake bulge! You pick up the cake from us, don't refrigerate or store properly and by the time you take pictures it has a bulge in the center, between the layers or at the bottom, caused by many things! So, I thought I'd post some care techniques for your cake!
1. Buttercream melts! It's butter based! #1 rule is to keep refrigerated, NOT FROZEN, until your party! Many cakes are not cut until halfway through or at the end of the party. It'll only take about 30 minutes to an hour, depending on the size of your cake, for it to come to room temp.
Keeping it out for hours beforehand will result in bulges in the center or at the bottom of the cake.
2. Depending on the venue/location, cakes need to be kept in a cool room. Ideally, 72 degrees or below. Any warmer and cake will come to room temperature too quickly and start to melt, which causes a buttercream puddle at the bottom of your cake.
3. If traveling, keep it refrigerated until right before leaving. Then, keep it under AC vents in your vehicle to keep cool while traveling. No need for an ice chest, just keep an AC on it, setting 3 or more. It'll function like a refrigerator and keep it from melting. Upon arrival, put back in the fridge until the party. I've traveled up to 5 hours with cakes like this and they've done great! Remember to keep a blanket or sweater in the car for you! Your car WILL BE COLD!
4. If the party is outdoors, keep cake in the home/venue UNTIL it's time for cake! Oklahoma is HOT AND HUMID! It'll melt extremely quickly. If a cool place is not available, I recommend having cake first for good pics and to enjoy before it melts!
**NOTE: Many bakers do freeze their cakes. You'll see videos all over social media. Our cakes here at Kendra’s Kreations are baked fresh every week and NEVER FROZEN. Our homemade whipped vanilla buttercream is also made fresh weekly. Because our ingredients are so fresh, (we are not icing frozen cakes, they are freshly baked), freezing our cakes and then thawing will result in the buttercream separating from the cake. 5. For leftovers: cover the cut portion of the cake with saran wrap and place back in the fridge. Or cut the remaining cake up into slices and store in an airtight container. This helps retain the moistness of the cake so it does not dry out. Our cakes have been tested and can last 5-7 days after the party if stored properly.
