Today is an odd day to say the least. For the past 11 months we have been honored to serve each and every one of you. This restaurant has provided many of you with a place to sit down and enjoy a meal, with friends and family, as well as some solo foodies. We have served many passers-by from across the state, as well as some out of state travelers, and even some international guests. Our backyard style BBQ and Pinsa Romana pizzas have become known for their unique characteristics, pleasing the taste buds of toddlers, as well as our elders, and everyone in-between.
Due to rising costs, and impassable obstacles, we have adjusted when necessary, in hopes we could continue to serve the community. We have fumbled at times, but have won many more times, and this is thanks to an amazing team, who proved they could adjust on the fly, and pull together to make it thru any shift, as a team. Many hours have been put in, despite the limited hours we were open to the public. And many hours are needed to keep the machine running. It takes a team, and thats no easy feat, especially in a small town.
Thank you to each and every one of you for your support, for your patronage, and the word of mouth. A concept that began roughly 15 months ago, proved a restaurant could make it in this gem of a city. With the right local support, as well as reaching out beyond our city limits, we gave people another reason to see whats happening in Waterloo.
Now to the main point......today will be our last day of dinner service. The time demand and logistics have proven to be more than a challenge, and we are unable to continue as a sit down, brick and mortar, establishment. We will be continuing our business with a focus on catering, and we plan to do some local pop up events throughout the year. We had always hoped we could integrate some art into our business model, but the current space has its limitations, and the time/energy required to operate the dining room holds us back from that part of the vision.
Over the next several months, we will be on a hiatus, but we will be back in action SOON, with a whole new vibe, an exciting new set up, and many of the same smiling faces youve come to know and love. This is not the end, but a new beginning. Like the phoenix, FYR will rise from the ashes and brighten the world once again 🍻
