Before 1897, the word "whiskey" on a label meant whatever the man holding the bottle wanted it to mean. Neutral spirit, cut with something brown. Prune juice for color. To***co for bite.

Then E.H. Taylor Jr. — the same Taylor who built the distillery that later carried Stagg's name — pushed through the Bottled-in-Bond Act. One distillery. One distilling season. Four years in a warehouse the government watched. 100 proof, exactly.

One of the first consumer-protection laws this country ever wrote, and it was about whiskey.

THE HOUSE REMEMBERS — the story on the wall.

George T. Stagg sold whiskey before he ever owned any. A salesman out of St. Louis who put his money behind a young E.H. Taylor Jr. in Frankfort, Kentucky. Taylor built the distillery. When the money turned, the name over the door became Stagg's.

That building is still standing. They call it Buffalo Trace now.

The whiskey that carries his name goes into the bottle the way it comes out of the barrel — uncut, unfiltered, full proof. No water. No apology.

It's the pour that comes with Steak Night this month. Tomorrow, Thursday, 5 to 10.
