Fall Shepards Pie:
Comfort food for the cold evening.

2 lbs minced lamb
1 large onion diced small
1 large carrot, diced small
2 cloves garlic, crushed and minced
2 tbsp worcestershire sauce
1½ tbsp tomato paste
2 sprigs of fresh thyme
1 sprig fresh rosemary, chopped
1 cup red wine
1 cup chicken stock
3 lbs potatoes (peeled and mashed)
3 egg yolks
1/2 cup cream
6 tbsp butter
8 tbsp parmesan cheese, grated
