Yesterday, I had the honor of creating a bountiful grazing station for ECHO at Studios on the Park.

ECHO (El Camino Homeless Organization) is more than a shelter — it’s a place of dignity, care, and action. I volunteer with them because their mission resonates deeply in a world that often feels uncertain.

If you’re looking for ways to support the unhoused in our community, ECHO is doing the work — day in, day out. Consider giving, volunteering, or simply learning more.

And to the folks at Studios, thank you for the beautiful space and support.

Out in the hills of Paso Robles, tucked between the vines and the oaks, we served up this beauty:

Poppy-crusted sea bass with foraged-style gemstone citrus, crispy fried bok choy, and a drizzle of ginger garlic gastrique.

Private dinner. Backyard sunset. The kind of night where the wine flows easy and nobody asks what a gastrique is—they just trust the fork.

I really don’t know what I was making here…Ancient Roman “Paella”?

I’m not often surprised with new flavors, but I’ve been on an Ancient Roman kick lately and got myself some Garum (fish sauce, I was used to this), and Asafoetida which I was NOT familiar with.

An intense umami, developed with a flavor somewhere between…broccoli and fennel, but with an essence of black truffle?

Can’t wait to keep playing!

Local farmers market peppers and garlic
Finished with Pacific flake salt, lemon juice from my friends garden, and olive oil

This was my favorite thing to serve, containing the most intent of my entire buffet and was wildly delicious AND healthy!
