Husband and wife duo, focusing on semi-fine dining with global cuisine, are adding a local touch by using ingredients from North, South, and Central America. Returning to this location allows him to share his unique culinary style with the world. He has returned to raise his children in the traditions he didn't experience as a child. Meanwhile, his wife Maria Valdez is committed to focusing on their children and clean cooking.

Our Commitment to Hospitality

Last night, we had two walk-in guests whom we graciously seated in one of our reserved booths. While we always recommend reservations, we do our best to welcome everyone with warmth and good service, no matter how busy we are.

We responded promptly to their needs—taking their order, ensuring their shared appetizers were prepared fresh, and attending to special requests, all while managing an active dining room and some technical issues behind the scenes. When a delay was mentioned, I personally stepped in to make sure their food was delivered and their experience was handled with care.

At one point, a question about splitting plates led to a misunderstanding. My response was meant to reassure them that we do allow sharing, unlike some places in Taos that have strict rules. Unfortunately, that intention didn’t land the right way. For that, I truly regret the miscommunication.

Despite our efforts—including multiple check-ins and even a courtesy discount—it became clear that our service didn’t meet their expectations. I always welcome feedback, even when it’s hard to hear, and I’m constantly working with my team to improve.

To all our guests, know that we value your time, your appetite, and your trust. Whether you’re a visitor or a local, we want you to feel cared for from the moment you walk through our doors. We’re not perfect, but we’re always listening, learning, and striving to do better.

Known for his Indigenous-forward, world cuisine, Chef Robin’s dishes reimagine familiar American plates using decolonized ingredients from North, South, and Central America. His approach honors ancestral foodways while making them approachable for today’s diner — a bold culinary vision rooted in tradition, storytelling, and innovation.
“My food is about reclaiming identity and reintroducing ingredients that have nourished generations, long before colonization,” says Chef Robin. “This journey isn’t just about winning — it’s about lifting up communities and celebrating where our food really comes from.”
A Competition with a Cause
The Favorite Chef Competition is more than a title. Every vote helps fund critical work through a partnership with DTCare, a U.S.-based 501(c)(3) nonprofit. Donations made through voting go toward grants for the James Beard Foundation, supporting culinary education, food justice, and sustainability initiatives.
• 36.5% of donations support competition operations
• Up to 13.5% covers processing and prize-related costs
• 1% is retained by DTCare for administration
• The remainder is granted to the Foundation
