Taos… 🤍

Lunch service has come to a close, and our final dinner at La Luna @ La Fonda will be February 28.

This isn’t an ending. It’s a return.

This summer, Chef Robin Valdez and I will be traveling to Pueblos across New Mexico — listening, learning, documenting, and continuing the work that has always guided us: Indigenous-forward food rooted in land and lineage.

While we wait for the final buildout of our full farm-to-table home, we’re creating something smaller… intentional… ancestral.

An Indigenous-forward charcuterie and wine spirit bar.
Game meats. Seeded crackers. Non-dairy cheeses. Local New Mexico spirits.
Dry aging. Salting. Pickling. Preserving.

The old ways — carried forward.

We’re also writing our cookbook. Filming our documentary. Building what comes next.

And now we want you to help us name it.

Our mission goes beyond a nomination — we’re working to help the James Beard Foundation recognize Indigenous Cuisine with its own category. We’re honored to stand alongside more than 15 Indigenous fine-dining, Indigenous-forward restaurants across the U.S. who are pushing for this change.
