Looking for an easy appetizer for your next summer party? 🦀☀️

Chef Frank Penna's Seafood Dip is a crowd favorite and comes together in minutes. It can be served warm or cold with crackers or crostini.

Seafood Dip Recipe
1 cup imitation crab, chopped
1½ cups mini shrimp and mini scallops
2 tbsp mayonnaise
2 tbsp sour cream
1 tbsp Dijon mustard
A few dashes Old Bay seasoning
A few dashes Worcestershire sauce
Splash of anchovy oil
Thyme seasoning, to taste
½ cup mozzarella cheese

Directions:
Combine all ingredients in a mixing bowl and stir well.
Transfer to a small baking dish or air fryer-safe dish.
Top with mozzarella cheese.
Air fry or bake at 390°F for 8–10 minutes, until hot and bubbly.
Serve warm with crackers, crostini, or fresh vegetables. Enjoy! 🦀🍤🧀

There are a lot of ways to make Eggplant Parmesan. This is Chef Frank Penna's favorite.

Chef Frank takes you inside the Villa Penna kitchen and shows you how to make his Sicilian-style breaded Eggplant Parmesan, along with a gluten-free version for those looking for an alternative.

Here's what you'll need:

2 large eggplants
Salt
Flour
3 eggs
Breadcrumbs
Olive oil

For the sauce:
1 can crushed tomatoes
2–3 cloves garlic
Fresh basil
Salt & pepper

For the cheese:
12 oz mozzarella
1 cup grated Parmesan or Pecorino Romano
