This Candied Kumquat Crostata was the “cake of the month” at the restaurant every January. We were always closed for the first part of the month and so it was available for only a couple of weeks.
We would purchase the case of kumquats in December, candy them and refrigerate until needed the following month.
The blind baked pate sucrée crust was painted with a thin crackle of bitter sweet chocolate for flavor and keeping the crust crisp, following by the cream cheese filling and topped with the candied kumquats.
One of my favorite desserts, it’s also the one that people mention nostalgically.
Perhaps if I find kumquats at the store one day I will make it again.
