This dinner for 4 was prepared for under 10.00, I get many emails asking how one can eat healthy on a tight budget! This is pork tenderloin, 1.5 pound for $5.15,asparagus $1.49, corn on the Cobb, $1.99, homemade whole wheat rolls, .25 each,butter, 1 tb, 20 cents. All bariatric friendly. Leftovers enough for at least 4 meals

Laura is pressure cooking our meat for dinner. I forget how tender this way of cooking can be,especially for those of us having issues with the texture of meat. Don't run out to buy one but if your have one you may want to try this

My goal this fall is to try some my favorite fall foods prepared differently, different combinations. Tonight I fixed roasted parsnips, a broccoli slaw sautéed in light olive oil with added zucchini, red pepper,yellow peppers and tomatoes. Over that drizzled pineapple flavored vinegar and blood orange oil, a bit of SPG, along with this we had a purple skinned sweet potato and grilled coho salmon,
