The Southern Italians use only the finest, freshest, and local ingredients. Chef Sam recognized the similarities between Southern Italy and Northern California growing conditions, coincidentally at 38 degrees latitude. Food happens with great finesse at this latitude. Take a few steps in Northern California and you are likely to run into something fresh and delicious. It may even be in your own backyard. The produce is truly treasured by the people who live here and for the places where the foods are prepared and shared. We are lucky enough to share in the experience.
