400* oven: Roasted the butternut with olive oil & fresh rosemary , sprinkle with Tony's . Cook to brown edges.
On another sheet pan, toss Brussels with olive oil, Kosher salt. Roast to tender, crispy.
Move Brussels aside. Place thin orange slices down on to the pan.
Place salmon over the top of oranges. Glaze salmon & drizzle the apricot Dijon glaze. Bake another 5-7 minutes to cook salmon almost done. Plate salmon on oranges, with the Brussels & add the butternut squash. It's Fall Y'all!! Enjoy fall colors on your plate! This is great on chicken, pork & duck!
Apricot Dijon glaze
3 Tablespoons apricot marinade
1 Tablespoon Dijon
1 teaspoon Seasoned Asian rice vinegar
1 teaspoon soy sauce
Stir & drizzle or use as a dip!
