Nothing compares to the flavor and texture of real Parmigiano Reggiano. Here are a few key signs to look for to make sure you're getting the real deal:
1. Rind Stamp: The rind of a true wheel will be imprinted with the dotted words "Parmigiano Reggiano" repeated across the surface. If you're buying a wedge, the rind may still show this stamp. It's a reliable indicator of authenticity.
2. Consortium Markings: Authentic cheese will have official seals or stamps on the packaging from the Consorzio del Formaggio Parmigiano Reggiano, including a serial number and sometimes a date of production.
3. Country of Origin: The packaging will state "Product of Italy".
4. Texture & Aroma: If the store offers samples, real Parmigiano Reggiano is hard and grainy, with a slightly crumbly texture and a complex, sharp, nutty aroma--never rubbery or bland.

Elevate your fresh greens and create a stunning salad by baking in-season pears with bold gorgonzola and sweet fig preserves. Simply preheat your oven to 400F and prepare the pears by slicing them in half, scooping out the corem and removing the stems. Fill the indent of each pear half with a dollop of fig jam and crumbled gorgonzola, then drizzle with olive oil and honey, and finish with freshly ground pepper. Bake the pear halves for about 15 minutes, remove from the oven and allow to cool for a few minutes before plating on a bed of fresh greens, topping with the juice from the baking dish, and serving with an additional drizzle of olive oil, salt, and pepper.

Before tossing ketchup bottles whose pesky remaining contents are clinging to the inside -- make a marinade! Just add: roughly 2/3 tbsp water, a drizzle of oil, a splash of vinegar or citrus, garlic powder, onion powder, paprika, chili flakes -- whatever spices you've got that sound good.
