Assorted eclairs. The traditional eclair is filled with vanilla pastry cream and topped with chocolate ganache. For variety, we also made a lime eclair that was filled with lime mousse and topped with lime-infused white chocolate ganache, and a raspberry eclair that was filled with raspberry mousse and topped with white chocolate ganache and freeze-dried raspberries.
