Piece of Cake Wedding Planning is a Minnesota-based wedding planning company, providing personalized full service planning, partial planning and wedding management for couples who want to live in the moment on their wedding day. I know you have a lot of choices when it comes to choosing a wedding planner, and I believe selecting someone who connects well with you and your partner is key. I love LO

VE. I’m that odd person staring at couples so happy and in love, wondering what their story is, and just being thrilled for them that they have one another. That’s why I love being a part of the wedding planning process with couples and helping them on the most special day of their lives! I worked in public relations for six years, focusing on event planning and ex*****on. I love events; that I always knew. When I planned my own wedding more than five years ago, I fell even more head over heels in love - not only with my now husband, but with wedding planning. I wanted to be a wedding planner for others, and I started to make it happen thanks to some amazing couples who have invited me in to be a part of their day. I love being on this journey with couples; taking care of every detail so they can enjoy every second of their wedding. I’d be honored to help with your special day! I’m Erica, owner of Piece of Cake Wedding Planning! We’re heading into our NINTH wedding season, and can’t wait for all the beautiful moments ahead this year!

A bit about me. I live in Savage with my incredible husband, Brian. We’ve been married for 12 years, and have three wonderful babies, plus our main fur girl, Luna. (Her full name is Luna Lovegood; nod to my Harry Potter obsession). Between the six of us, there’s never a dull moment!

I love being on the water and can’t wait for summer! I’m currently addicted to the double crunch chocolate pretzels at Costco. YUM! Our family loves to travel, and just visited family in Florida in March. We went to Disney World, Madeira Beach and Clearwater and had the most amazing time!

These two are such a kind couple; they love laughter and fun and just want their wedding day to be a good time! They met in college at an RA meeting and instantly connected. They got married this evening with the sunset and were so excited to celebrate with their nearest and dearest!

Happy Wedding Day, Grace and Mark!

These two met 7 years ago while teaching people with disabilities how to water ski. They both slalom ski competitively, love summer and bonded over their love of the water! They’ll start their wedding day with a morning swim together, then a picturesque ceremony overlooking the lake, a celebratory boat ride after they’re married, and their whole special day will take place at their family’s lake home. It’ll be a glamorous celebration with many personal touches, and they both can’t wait to have their whole support system together celebrating with them!

Happy Wedding Day, Collette and Joe!

These two have been together for 13 years, share two beautiful kids and are so excited to officially be married! They wanted help driving wedding details and design items forward given their busy schedules, and we loved planning with them! They are one of our complete planning couples, so we got to know them well, and they are just salt of the earth people who were a joy to plan with!

These two wanted a rustic and outdoor, yet romantic and family-friendly environment, which led us to their venue. We focused on colors of burgundy, navy, blush and ivory, with wood and greenery accents, for their florals, candles and décor, which they love and compliments the venue setting. This design feels very much like them and combines their casual style with wedding elegance! Paired with a dessert bar, photo booth, and an awesome dance, it’s going to be an inviting, fun, perfect day with their loved ones, exactly what Collette and Joe wanted!

Happy Wedding Day, Rachel and Alec!

These lovebirds met through mutual friends. What started as a night out in Uptown, ended with a skee-ball game and a connection that couldn’t be denied. The rest is history! They love to travel together and exploring new places is their passion, sometimes with their fur baby, Bo! Alec proposed to Rachel during one of their many adventures- during a sunrise walk along the North Shore on their 5-year anniversary! And now here we are!

This amazing couple has a beautiful day planned for their loved ones, and it’s been a joy to help them bring their wedding vision to life! They’re featuring colors of slate blue and terracotta, with accents in white and amber. They’ve incorporated so many personal elements as well, including a beautiful ceremony officiated by a dear friend that’s going to be a tear-jerker. We’re so excited for this beautiful day!
