Our family, like so many others, have experienced tremendous hardships: we have lost beloved family members and dear friends; we had COVID; we faced economic uncertainty; we missed our out of state family. But, we also experienced many miracles. We have been healed, helped, and hoisted. We found new ways to hold on to hope, and we welcomed a beautiful new baby into our family. This holiday season has been harder than ever, but we are grateful for the joy this season inspires. We wish you all a very Merry Christmas, and Happy Holidays.

Nope, those are not apples! I am not joking when I say this is the best thing I have ever made. Cheese and onion pie. When I started this project I wasn’t convinced that this would be very good, but what could be wrong with caramelized onions, fried potatoes and a bunch of cheese? Nothing. Just remember that onions are cheaper than therapy. Oh. And gum, don’t forget the gum.
