Today we honor the Indigenous peoples of this land, past and present.
Santa Fe sits on the ancestral homeland of the Tewa people, who called this place O'gha Po'oge, "White Shell Water Place," long before it had any other name. The Pueblo nations of Northern New Mexico are still here, and their cultures, languages and foodways still shape everything about this place.
As a kitchen, we owe a lot to that. Corn, beans, squash and chile were cultivated and cared for by Indigenous farmers for thousands of years, and they still feed us today. Chef Dhiru came to New Mexico from far away and found a home here. Every time we cook with local ingredients, we're reminded that we're guests on this land, and that the food we serve is built on knowledge that started long before us.
Today we're grateful, and we're listening. 🌽
