This week’s pickup dish was one of my all time favorite dishes….chicken sopes topped with shredded lettuce, tomatoe, pickled onions, crema, and salsa. Those who know me as a chef know that corn is life to me. Sopes may sound like simple ingredients of masa harina, water, and salt with nothing else but it’s for the reason of the corn to shine. Although I have catered this dish at events, this was a first for my soup season weekly pickup dish. I was inspired by my daughter a few weeks ago remembering her grandma ordering this often when they went out to eat. This week was Customer Appreciation week. Served was pork or chicken chile verde over a bed of rice and topped with monterey jack cheese. Too wash it down each customer had a choice of margarita, orange jarrito, or water. Thank you I much appreciate you all!
