This week’s pickup dish was one of my all time favorite dishes….chicken sopes topped with shredded lettuce, tomatoe, pickled onions, crema, and salsa. Those who know me as a chef know that corn is life to me. Sopes may sound like simple ingredients of masa harina, water, and salt with nothing else but it’s for the reason of the corn to shine. This week’s fusion dish was birria ramen. 5-6 hours with over 34 ingredients is worth the work to make authentic birria. You can’t just call it “birria” because it’s in a pressure cooker or crockpot with a few ingredients. It’s about the authentic loving care with some ramen added 😆. Condiments toppings were cilantro, lime, fresh onions and chile oil. Thank you to everyone!

4 days of quesabirria tacos comes to an end. Thank you everyone! Shout out as well to all the nose to tail eaters that enjoyed the bone marrow tacos. Last but not least stay tuned to the newest edition to my winter menu lineup of birria ramen.
