Bussin’ Cauliflower Ballz

Made some panko cauliflower bites consisting of potato, cheese and bacon. Kid-approved!

I baked one large russet potato and shredded it into a large bowl. Added 2 cups of chopped organic cauliflower florets (minimal stems), 2 Tbsp Calabrian Parmesan, 1 C Mexican Shredded Cheese Blend, 1/2 C Shredded Parmigiano, 2 eggs (so expensive!), 3 Tbsp of Potato Starch and 1 Tbsp fine black pepper.

Molded 12 meatball-sized balls and squeezes out any excess moisture. Then coated in flour, dipped in egg and tossed in panko bread crumbs.

Fried at 400° until too brown.
