I recently had the privilege of cooking for a group of people graduating with their degrees in nutrition! It really challenged me and got my wheels turning to do this mostly-paleo menu based on local/sustainable/organic meat and produce :) Here is what I made for them: Moroccan beef, butternut squash, turnip greens & lemon stew, assorted roasted seasonal vegetables, herbed quinoa with asparagus & zucchini, and green salad with lemon cucumbers & balsamic vinaigrette.... the only oil I used in this menu is coconut oil. This was the most nutritious menu I have ever made and it was DELICIOUS! I hope to get more catering gigs like this in the near future! Tell your friends, tell your parents, tell your colleagues: I am here to cater your next party or gathering, and I will cook you whatever you would like, however you would like it! :) :) :)
