These distinctive selections will be presented by whiskey expert and brand ambassador, Bianca Sterling. Chef Erin has crafted an exceptional seasonal pairing menu to accentuate each selection.

Utah may not be what comes to mind when you think of whiskey, but this award-winning distillery reminds us of Utah's important part in our country's whiskey history; Utah cast the all-important 36th vote to end prohibition in 1933! Founded in 2006 by David and Jane Perkins, High West became Utah's first legal distillery since 1870. A short 10 years later, High West was crowned Distiller of the Year by Whiskey Advocate.

Today, High West focuses on exceptional core whiskies and an adventurous specialty program featuring unique mash bills and extensive barreling. We'll feature a combination of both facets, including the 2026 edition of Bourye (higher ABV and 10+ years of aging) and two very limited selections; a Sherry Aged Straight Whiskey and the Single Malt High Country. All of the selections will be available for purchase at the end of the evening! Expect a very fun evening of whiskey and food conversation from both Bianca and Chef Erin.

✨️ Join us for our next winemaker dinner series, with a fantastic line up of wines from boutique, Paso Robles Winery, Copia ✨️

🙋🏽🙋🏽‍♀️ We are thrilled to welcome owners/winemakers Anita and Varinder Sahi for three evenings of winemaker dinners.

The story of Copia Vineyards begins with the passion of Anita and Varinder Sahi, their shared love of wine and the beauty of its source. Their shared interests, entrepreneurship and life’s ever-winding path sparked a trip to Paso Robles Wine Country in 2015. Essentially, they never left. In 2017, the Sahis’ search to find a special site to produce world-class Rhône and Bordeaux varietals was successful. They became the proud stewards of 50 acres of paradise-on-earth in the Willow Creek District of Paso Robles. It is now has 40,000 vines planted in 24 distinct blocks. In 2022, their estate grew to include 26 acres of dramatic landscape in the Adelaida District. Both vineyard sites have breathtakingly beautiful slopes, calcareous soils and strong marine influence. The vines on the Copia Estate are now producing some of the most opulent, concentrated fruit with densely rich varietal characteristics.

Joyce Wine Co. focuses on organic practices in farming and practicing sustainability in all aspects of production. With a dedicated to producing wines of place, Joyce produces wines that are a reflection of the terroir and not the cellar. Believing that all additives, such as acidification, enzymes, cultured yeast and cultured bacteria should be avoided at all costs the goal is a pursuit of the greatest expression of terroir. Their ultimate goal is to create wines that are a transparent reflection of Monterey County.

🙋‍♂️ North County Wine Co. owner, Jim Tobin will be presenting the wines this time around. He'll share insights on the Monterey wine region, winemaking, and the rich history at Joyce.

✨️ 4 NIGHTS WITH IDLE CELLARS ✨️

🙋‍♂️ Winemaker Ben Larks will be joining us for each evening. We are thrilled to have Ben join us again, for an unprecedented 3 times in less than 3 years! We first featured his winery in July 2024 and it was one of our most successful series. We brought Ben back in February 2025 and demand has only increased! Ben brings humor, knowledge and insights like few others. For this year's dinners, we'll showcase some all-new wines, new vintages and a completely new pairing menu.

This will be a great opportunity to try out 5 different wines from a non-distributed, very small-production winery. The rarity of these wines coupled with Ben's grassroots experience of teacher turned winemaker makes this is certain to be a not-to-miss dinner series. Expect a wonderful evening of wine, food and insights from Ben and Erin.

🏅 Join us on Saturday, April 11th at 6pm as Dresser Winery celebrates their five awards for the Best of Central Coast, including Silver and Bronze medals for Best Overall Winery, Best Winemaker, Best Cabernet Sauvignon, Best Zinfandel and Best Wine Tour.

I am honored to help Dresser Winery celebrate and share my wine pairing dishes with all of you. I regularly host pop-up dinners throughout Southern California featuring some of California's hidden gems and favorite wineries. However, April 11th, I'm hitting the road and sharing my dishes to the wine and food enthusiasts of Paso Robles!

This dinner will take place at the Dresser Winery Barrel Room beneath the Spring sky with beautiful views under the lights up into the vineyard. If inclimate weather, we will move the event inside the barrel room.
