Chef James T. Canter is an internationally experienced chef, culinary consultant, educator, and storyteller whose career has taken him from California kitchens to the vibrant culinary landscape of South Korea. After several years immersed in Korean food culture, where he worked alongside local chefs while studying traditional techniques, fermentation, butchery, and regional cuisine, James has recently returned to the USA, bringing with him a unique East-meets-West culinary perspective.
As the founder of Guerrilla Gourmet, James has built a reputation for creative dining experiences, culinary consulting, hospitality mentoring, and cross-cultural food education. His work has also included collaborations with UNESCO initiatives and hospitality training programs, reflecting his passion for preserving food traditions while inspiring the next generation of chefs.
A firm believer that food is one of the world's most universal languages, Chef Canter combines classical technique with a spirit of curiosity and adventure. Whether exploring Korean temple cuisine, introducing diners to forgotten regional specialties, or mentoring young culinary professionals, he approaches every project with enthusiasm, respect for culture, and a commitment to lifelong learning.

Was inspired to cook something warm and delicious on this cold and blustery morning. Took some basic ingredient, some leftover spaghetti, and the ghost of rotisserie chickens past and hooked up a peanut sauce.
Been wanting to do a really nice savory peanut sauce with tons of umami and cravability. Fried up the spaghetti and chicken in some sesame oil and butter until it had crispy bits and pieces. Then tossed it with fried garlic and fried shallots, green onion, and sesame seeds. Total bangin breakfast on the cheap, turned out great!!
