Winter sucks!
Chicken Chorizo IPA Chili ROCKS! Best chili ever!
Leftover chicken, chorizo, and your favorite IPA make this your new go-to chili.
I’m not a big fan of tomato-based chilis. Yes I’m aware that most chilis are tomato-based! 🤮 That was my motivation to create the best chili you’ve ever tasted!
This is a white chili that I created with leftover chicken and a few other ingredients I had on hand. Luckily A date left a few beers in my fridge which inspired the addition of a 12 oz. IPA. to be precise.
I would have liked it to be a little bit spicier so next time I’ll add more jalapeño and maybe some red chili flake for good measure.
Chicken Chorizo IPA Chili
1 pound Chicken (I used leftover rotisserie chicken)
1 pound Ground Pork Chorizo
6 oz. Onion, chopped
1 tablespoon Garlic, minced
3 Anaheim Chilis, charred, de skinned, deseeded,diced
3 medium Jalapeño, diced small
1 tablespoon ground Coriander
1 tablespoon smoked paprika
1 tablespoon chili powder
12 oz. IPA, pick any kind you like
1 cup red beans
1 cup kidney beans
1 cup pinto beans
2 cups chicken or veg stock
Char chilis. Place in Bowl. Cover with plastic wrap and set aside to steam the skins off.
Sauté onions. Add garlic.
Add chorizo and brown completely.
Add chicken. Add jalapeños, Anaheim chilies, spices. Allowed to cook for a few minutes.
Add IPA. Allowed to cook until half the liquid is absorbed, about five minutes.
Add chicken stock. Add beans. Season with salt and pepper as desired.
Cover and simmer for 40 minutes.
If your chili is a little thin add a slurry to thicken.
