Needed to do a quick cook for some Mexican Pork Tacos. Cubed up the meat, seasoned and placed on the smoker. Cooked until temp was 165*, placed in pan with hot sauce and more Mexican seasoning. Cooked wrapped in pan until tender. Total cook time about 4 hours. Definitely will do this again.
