Breakfast burritos for 5!
Ingredients:
10 eggs
5 burrito sized flour tortillas
2 large white potatoes
1/2 yellow onion
1/2 red bell pepper
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp rosemary
2 TBS extra virgin olive oil
2 TBS salted butter
2 4oz cans hatch green chiles (optional)
1 cup sharp cheddar cheese (optional)
Directions:
1. Peel and dice the potatoes and par boil for 5 minutes. Strain and set to the side.
2. Add the oil to a large skillet on high, add the potatoes, diced onion, diced bell peppers, green chiles(optional,) and seasoning to the pan. Stir occasionally until skin forms on potatoes, about 7 minutes.
3. Remove potatoes from the skillet and add the butter to the same skillet. Crack and stir the eggs until well blended, add to skillet and scramble them. Set cooked eggs to the side.
4. Heat the tortillas on high until they form air bubbles, lay them flat and add eggs, cheese(if desired,) and potatoes. Roll up the burrito and enjoy!
