Today is Chicken salad and pasta salad day. Last chance to get it until after the 26th. Will be out of town.

I will be making chicken salad and pasta salad tomorrow along with chicken enchiladas. It will be the last day that I will be making anything special ordered till after I get back from our vacation on the 25th. I have lots of stuff prepared and ready to go in the freezer. Let me know if there is anything I can get for anyone. I will also be in the Sachse area on Friday and it might be my last time for a while. I have a large event to prepare for next week and we will be gone the following week.

My projects today. 7 things of beef chili, 7 things of tomato basil soup, 6 pans of Firecracker Casserole & 4 Beef Stroganoff. 3 of the Firecracker dishes are already in the fridge ready to serve at church tomorrow. Plus I walked 3 miles this morning.

On the menu this week is roasted tomato basil soup, chicken bacon ranch, firecracker casserole, crawfish ettouffe, beef chili, baked ziti, and beef stroganoff. Oh and chicken salad on Thursday. Let me know if you want to place an order. If there is time, I’m hoping to get some cornbread dressing made up.

I did not get pics of the yummy fajitas that went with these fresh sautéd peppers & onions today but I catered a Mexican fajita/taco bar with chicken & beef fajitas & some taco meat. With all the trimmings. Plus I put 5 chicken lasagnas in the freezer for a church event.
