Just wanted to share my two cents, because I know things are pricey.. like everything.
But just to put this into perspective because until I was in this business, I didnβt have any idea either.
I saw someone that said they were quoted $4000 for a 100 person charcuterie, which yes I do agree that thatβs a little expensive for that amount of people (but i dont knoww all the details either, so maybe it was a fair price π€·π»ββοΈ). But she said itβs a little pricey, especially for charcuterie.
The thing is with charcuterie and why it is so expensive is because youβre not getting huge bulk items that only cost a couple cents per item.
A lot of people love prosciutto and prosciutto cost about seven dollars per package so if youβre wanting 100 people to have at least two pieces of prosciutto οΏΌ thatβs $100 right there. That doesnβt include all of the other meats, cheeses, fruits, veggies, spreads.
I know itβs hard out there and I know thereβs so many expensive items but putting a charcuterie table together takes hours and hours and hours of preparation and that doesnβt even include delivering and setting up. Thatβs just pre-delivery and set up.
The last grazing table I did took eight hours of preparation meaning cleaning everything,cutting certain items packaging other items. And that was all before the event which took me an hour to drive to and two hours to set up.
Not all food items are priced the same, and most people that do charcuterie are trying to find the best and most fresh quality.
So although I do agree 4 grand is a little expensive, at the end of the day businesses do need to make a profit, and there are so many things that work against small businesses in their first five years. I donβt remember what the percentage is, but itβs a huge percent that do not make it to year five.
