Paella Negra, also known as ArrΓ²s Negre, is a traditional Valencian and Catalan dish made with squid or cuttlefish and rice. The dish gets its striking jet black color from squid ink, a natural ingredient that has been used in Mediterranean cooking for centuries. Far from just adding color, the squid ink adds an incredibly rich black color to the rice while simultaneously enhancing the flavors of the seafood.
Our version stays true to tradition. Fresh prawns carefully arranged on top of that deep black squid ink rice, mussels tucked around the edges, squid rings throughout, all cooked low and slow over an open flame until every grain of rice has absorbed every layer of that rich, briny, umami-packed flavor. The socarrat at the bottom forms perfectly and the seafood caramelizes beautifully on top. It is a showstopper on every level visually, aromatically and in taste. π₯
